Ursula Schneider is the ninth generation to run this 200-year-old estate, farming 37 acres with her husband, Steffen Müller. This bottling, from a limestone-based vineyard in the southern end of Nierstein, is racy and elegant, driven by a lovely, sparkling acidity.
